Plantain Crackers are Easy and Fabulous

I’ve now tried actually making these, and they’re fantastic. For people doing Paleo or similar diets who have nut allergies like I do, they’re perfect. They don’t taste at all like bananas, and I’m guessing they’re probably relatively low carb, too, because you use green plantains that aren’t even remotely sweet. They taste like wheat-flour crackers even though they’re gluten-free. My only issue is they get softer when stored, but a quick trip into the toaster oven and they’re crispy again.
